Business Profile: Just Turkey

Brian Latman, the owner of Homewood's Just Turkey, tells us why we should give his joint a chance.

Chicagoans are known for their love of italian beef, ribs and hot dogs, but turkey?

Just Turkey Owner Brian Latman explains what's so exciting about the new trend:

Why did you choose "Just Turkey" over another franchise?

I chose Just Turkey because it is a new concept in the food industry. I can drive up and down the street and find burgers, hot dogs, chicken—but to find a location with only turkey products is impossible. Many customers are looking for an alternative from pork and Just Turkey provides that alternative. Just Turkey is also a healthier choice.
Have you always been interested in the restaurant business? What inspired you?

I was always interested in doing something where I can be my own boss. I currently sell food and paper products to about 50 restaurants so I knew a lot of the food cost involved in running a restaurant. I am a self-motivator and I like new challenges which is why I said let’s see what happens.

What advice would you give someone else who wanted to start a franchise in the H-F area?

Owning your own restaurant takes a lot of hard work and time. I would say to get to know your village representatives and the individuals who you will need to help you out. Ask a lot of questions. Do as much research ahead of time and planning to save time on the back end.  Make sure you have a lawyer look over your lease. Go to the village meetings and introduce yourself to the mayor. Make yourself available and introduce yourself to as many people in the community as possible.

Where are your favorite places to shop and eat locally?

Obviously Just Turkey. I eat at Jimmy Johns, Culvers, Panda Express and Pops as well as a number of other Homewood establishments.  I really believe in shoping Homewood. I would say 95% of my family’s shopping and eating is done locally.
